Celebrating the local vibes at Sebastian in its spectacular location of coastal Williamstown, our gin incorporates saltbush harvested from outside the restaurant, rosemary from our deck and local makrut lime cinnamon & orange peel.

β€œFor five years I watched the sunsets, sipping G&Ts and dreaming of capturing the essence of San Sebastian in a bottle. I was inspired by the beauty of this city and the flavour of our local ingredients. After much research, I decided to use a combination of rosemary and saltbush from our courtyard and oranges from Spain. I experimented with the ingredients until I found the perfect balance and flavour. Several months of trial and error later, in collaboration with a local distillery, I was finally able to create this delicious and unique gin that truly captures the essence of San Sebastian. The combination of rosemary and saltbush creates a unique aroma that is reminiscent of the sea, while the oranges from Spain add a sweet and tart flavor which gives the gin a perfect balance. My dream of creating a bottle that captures the essence of the city has come true, and I couldn't be happier.”
